1 Read the recipe carefully first

This is important so you can make all the necessary preparations, such as preheating the oven to the correct temperature and measuring the correct amounts of ingredients. Baking is very scientific and one measuring mistake can change the end product.

2 Use the correct size baking tray or tin

If you use a small or medium baking tray in place of a larger one, a peaked crack will form in the centre of your cake and chances are the cake will also be heavy, stodgy or undercooked.

3 Do not open the oven until a third of the baking time has lapsed

Opening and closing the oven door frequently drops the oven temperature and interferes with the baking process.

4 Always let your cake cool before adding frosting

This applies to any kind of frosting as well as dusting with icing sugar or butter. Butter icing, specifically, will melt while icing sugar will disappear or be absorbed by the heat of the cake.
