3 Ways to eat lollies for breakfast!

Go ahead, let your inner child out and eat an ice lollies for breakfast! Wait, dessert for breakfast? Sure, why not… these lollies are full of goodness! We tried it out — and it’s totally feasible (not to mention deliciously awesome). Check out our frozen takes on brekkie below:

BERRY PARFAIT LOLLIES

(Makes 6)

Ingredients

- 3 Cups of cut strawberries

- 1/4 Cup honey

- 1 Cup Greek yogurt

- Sprinkling of granola (optional)

Method

Combine the Greek yogurt and honey together and simply start layering your molds: yogurt mixture, fruit and so on until each mold is full. You can sprinkle a little granola at the base of each stick for a nice little crunch.

Freeze for a few hours.

To remove your lollies, all you need to do is run the molds under warm water.

CHIA COCONUT POPS

(Makes 6)

Ingredients 

1 Can coconut milk

1/4 Cup chia seeds

Fresh fruit of your choice

1 Tbsp honey (optional)

1/2 tsp vanilla or almond extract (optional)

Method

Pour the coconut milk into a small bowl (including the thicker residue on the top) and give it a whisk or a stir to combine well.

Stir in the chia seeds and let them sit, stirring once or twice, for about 30 minutes, to allow the seeds to expand.

Now start prepping your lollies. Add a little bit of the coconut mixture to the bottom of each of mold.

Cut your fruit into small pieces and some of the fruit in on top. Continue adding more coconut mixture, then more fruit until the molds are almost full.

Freeze for several hours until completely frozen.

To remove your lollies, all you need to do is run the molds under warm water.

ICE COFFEE LOLLIES

(Make 6)

Ingredients

1 – 2 Cups cold strong coffee

3/4 Cup heavy cream, plus extra for the bottom of the molds

sugar to taste

Method

Set aside 1/3 cup of cream and sweeten it with a little sugar (atir until completely dissolved). Then pour a little of the cream into the bottom of each mold.

Freeze the mold until the cream is solid – about an hour.

Mix the coffee, more cream and sugar (to taste) in a glass measuring cup and stir until the sugar is dissolved. You will need about 2 1/4 cups of the mixture. Refrigerate until chilled (do not freeze!).

Carefully pour the chilled coffee mixture into each mold, filling it to the top. Freeze until solid.

To remove your lollies, all you need to do is run the molds under warm water.
